KLM serves meals made with local ingredients during its ‘From Holland’ Festival


In October and November, KLM Royal Dutch Airlines will, for the fourth time, celebrate its “From Holland” Festival on all intercontinental flights out of Amsterdam, serving meals made with local ingredients. The World Business Class meals were created by leading chef Onno Kokmeijer of the Amsterdam restaurant Ciel Bleu, which holds two Michelin stars.

KLM will celebrate the “From Holland” theme again this year, because our passengers enjoy the typical Dutch character of this festival. With this festival, KLM emphasises its Dutch roots and offers passengers a full ‘Holland experience’ during their flight.

Local ingredients
The meals served during the festival are made with all sorts of products sourced from local suppliers. Passengers will enjoy beef supplied by De Vrije Koe (the Free Cow), which is striving to reintroduce indigenous Dutch cattle, such as the Blaarkop, in the Netherlands. These cows are allowed to graze unhindered in the nature reserves of North Holland, where they receive no additional feed or growth supplements. KLM and De Vrije Koe have entered into a long-term partnership. This initiative is a new step in raising the sustainability of our catering. To achieve this, KLM is working in close cooperation with its suppliers. This year we will also be serving MSC-certified North-Sea sole, traditional Dutch “stamppot” mash with chicken sausages, “Bossche bollen” confectionery, and chocolate sprinkles.

Onno Kokmeijer created all the meals that will be served in World Business Class during the festival. Onno is Executive Chef & Manager of the Ciel Bleu restaurant at Hotel Okura in Amsterdam.

Flowers for sale on board
KLM will be the first Dutch airline to sell fresh cut flowers on board. The flowers are supplied by Frederique’s Choice, a company founded by one of the Netherlands’ first top models Frederique van der Wal. The flowers, orange roses, are produced by a Dutch cultivator using sustainable methods. Frederique will also be onboard the flight to Curaçao which will launch the Festival.

Delftware proverbs
During the festival, all serviettes, headrest covers, coffee cups and even a retro peppermint tin for World Business Class passengers will be decorated with typical Dutch proverbs in Delftware style. The placemats in Economy Class are decorated with images of paintings that are on display in the Rijksmuseum and the Van Gogh Museum.

The meals served in European Business Class will also consists of ingredients sourced locally. Passengers will be able to enjoy Dutch films, music and other programmes via the Inflight Entertainment System.
