Onno Kokmeijer devises KLM’s European Business Class menus

From 10 December, KLM Royal Dutch Airlines will be serving meals by the leading chef Onno Kokmeijer in European Business Class. This is the first time KLM has worked with a top chef to develop meals for its European Business Class. This collaboration is part of the new concept KLM is launching for all its European flights.

It is an honour to be able to work with Onno Kokmeijer again, this time on the meals for our longer European flights. We are looking forward to surprising our Business Class passengers on our European flights with culinary delights by one of the Netherlands’ leading chefs.

In October, KLM announced it would be working with the Michelin three-star chef, Jacob Jan Boerma, to develop new World Business Class meals. Now, KLM is working with chef Onno Kokmeijer, Executive Chef & Manager at the two-star restaurant Ciel Bleu at Hotel Okura Amsterdam. Onno and his Chef the Cuisine Arjan Speelman have developed the main lunch and dinner menus for the longer European flights to and from Amsterdam. (*) The menus will change with the winter and summer flight schedules. Passengers will have a choice of two meals, which will change every week. Onno and Arjan also designed the menus for KLM’s World Business Class in October 2013.

KLM investing in its catering product
KLM is optimising its service on European flights. KLM and KLC now serve the same snacks and sandwiches in Economy Class, which creates greater product uniformity across our European routes. Sandwiches will also be served more often on KLM flights for breakfast, lunch and dinner.

Ciel Bleu
Ciel Bleu, the two-star restaurant on the 23rd floor of Hotel Okura Amsterdam, is in many respects a unique location. Its spectacular view across Amsterdam grants guests the opportunity to see the city from a completely different perspective. Onno Kokmeijer has held sway over the Ciel Bleu since 2003. With Arjan Speelman, his Chef de Cuisine, he received a second Michelin Star in 2007. These chefs draw inspiration from the tastes their international guests desire and are constantly in search of the best ingredients and innovative ways to prepare food.
